Summer Salads: Pear and Goat Cheese

In your twenties, there are a lot of competing priorities that make eating healthy a challenging endeavour. Fresh fruits and vegetables are more expensive than ramen packets, and drinking a few beers is more appealing than drinking 2 liters of water a day. In addition, it can be difficult to prepare meals for one without feeling wasteful or overburdened by leftovers. But developing healthy eating habits in your twenties can have long term positive effects of your mind and body. Meal planning and execution may seem daunting but I am here to give you simple and delicious recipes to fuel a healthy lifestyle! 

Today I am featuring Pear and Goat Cheese Salad. This is a light, crisp salad, perfect for hot summer afternoons. The total prep time is less than ten minutes and it is de-e-licious! 


Start with the basics: greens, nuts, cheese and fruit. I chose a mix of baby spinach and baby arugula, cashews, goat cheese, pear and, for extra flavor, craisins. 


First, add the mix to a salad bowl.


Next, cut the pear in half and thinly slice. Wrap up the rest, or, if you are really hungry, include it as a side. 





Add pear, goat cheese, crumbled cashews, and craisins. 


 Toss with a spoon and fork (no fancy utensils necessary!).


Drizzle balsamic dressing over the salad and enjoy :)
